Energy Balls

Ingredients

  • 200g rolled oats
  • 120g almond butter (or peanut butter)
  • 60ml honey or maple syrup
  • 60g mini chocolate chips
  • 40g desiccated coconut
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

    Combine all ingredients in a large bowl and stir until fully combined.

    Cover the bowl and refrigerate for 30 minutes — this makes the mixture easier to roll.

    Roll heaped tablespoons of the mixture into balls. Store in an airtight container in the fridge for up to 1 week.

Notes

Add a tablespoon of chia seeds or flaxseed for extra nutrition. You can swap chocolate chips for dried cranberries or raisins. This is for a dear friend, Nadja, who made me discover energy balls.
