Why vegan cookies usually flop

Two physics problems:

  1. Water content. Most vegan butters have a higher water content than dairy butter (which is roughly 80% fat). The extra water steams off during baking, which is why ungeneous dough spreads thin. Quality brands like Naturli Vegan Block or Miyoko's are closer to 80% fat and behave much more like dairy butter.

Common mistakes

  • Cookies are flat and greasy. Vegan butter had too much water, or you skipped chilling. Try a higher-fat vegan butter brand and chill overnight.
  • Cookies are cakey or domed. Too much flour (often from scooping the cup instead of spooning), or under-baked. Cookies should look slightly underdone when you pull them out; they firm up as they cool.
  • Cookies are bland. Salt was light. Both salt in the dough and flaky salt on top matter; one is not a substitute for the other.
  • Bottoms burn before tops set. Your oven runs hot, or the pan is too dark. Try lining with a second piece of parchment, or lowering the heat by 10°F (5°C).

Storage and freezing

Baked cookies keep at room temperature for 4 days in an airtight container. Add a slice of bread to the container to keep them soft (sounds weird, works perfectly: the cookies pull moisture from the bread).

Better yet: freeze the unbaked dough. Scoop into balls, freeze on a tray until solid, then transfer to a freezer bag. Bake straight from frozen, adding 2 minutes to the bake time. Now you're 12 minutes from fresh cookies whenever the craving hits.
