- 1
Preheat oven to 400°F (200°C). Line a sheet pan with parchment.
- 2
Whisk together honey, soy sauce, garlic, lemon juice, mustard, and red pepper flakes in a small bowl.
- 3
Pat the salmon fillets dry and season lightly with salt and pepper. Place skin-side down on the prepared pan.
- 4
Spoon three-quarters of the glaze over the fillets, coating generously.
- 5
Bake for 12 minutes. Remove from the oven, spoon the remaining glaze over each fillet, then switch the oven to broil.
- 6
Broil for 2–3 minutes until the glaze is bubbling, caramelised, and slightly charred at the edges. Watch closely — honey burns fast under a broiler.
- 7
Rest 2 minutes before serving. Garnish with fresh herbs.
Notes
The two-stage glazing — most of the glaze before baking, the rest just before broiling — prevents the sugars from burning in the full oven heat while still getting the caramelised finish at the end. If your broiler runs very hot, cut the broil time to 90 seconds and watch constantly.
